Cupcake Saturday!

It's Saturday! I do love the weekends. And it's supposed to clear up and warm up out here this weekend. It hasn't gotten out of the 50s recently. We're definitely ready for summer. We've had a couple of tastes of it last month, but then it was back to sweatshirts. Oh well.
So to start off the weekend, we have another Cupcake Saturday to share with you. This week's flavor is apple cheesecake.


 This was actually our second attempt to get the combination of flavors right. We tried it out a few months ago, and it wasn't quite right. They were either too apple-y or too cheesecake-y. This time, however, they were perfect. An equal combination of both flavors. The cupcake is an apple spice cupcake with chunks of apple, covered in a caramel apple cream cheese frosting, topped with some crushed graham cracker crumbs. It's kind of like an upside down cheesecake- crackers on top, cheesecake, then the apples. But it doesn't really matter how it's put together; they are still delicious! Oh, and can't forget a little bit of caramel drizzle on top!
