Happy Saturday! Today's cupcake is a second attempt at gluten free cupcakes. Our first ones were AWFUL! I can't put it any nicer. They were terrible. So we decided to go back to our recipe and revamp it. They came out with much better results the second time. These actually taste edible. I don't know how people with Celiac's Disease do it. I don't think I would do very well without some baked goods. Luckily there seems to be a lot more choices on the supermarket shelves. I don't know if they really taste any good, but these cupcakes don't taste bad!
These cupcakes were frosted with a vanilla buttercream frosting, but I think they would taste amazing with a chocolate fudge frosting!
